Taco Seasoning
- 4 Tbsp Chili Powder
- 3 Tbsp plus 1tsp paprika
- 3 Tbsp ground cumin
- 1 Tbsp plus 2 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper

For about a year, I have been making my own taco seasonings, although I do it every batch, instead of bulk, like this. It is so much better than the store bought stuff.
I use Chili Powder, Paprika and definitely always Cayenne. Cayenne adds so much more body and depth to the sauce than just using Chili. I usually dice an onion and cook it with the meat and also add diced Chilis or Hot Peppers as well, so the onion powder is unecessary. You are right, there is so much salt it processed, prepared food! I even stopped buying the “Mexican Blend” of cheese, because it was so salty! It would overwhelm the meat! Usually just use a colby jack-chedder mix which has a creamy, sharp taste that really compliments the spice.
I never thought to add Cumin. I’ll have to try that.

I make my own, too, but I use ground ancho chili peppers instead of chili powder, and then I add some coriander and oregano. So easy to make, though, and totally customizable for your family’s tastes–that’s what I love!

I’ve been making my own taco seasoning for years (I make most of my own seasoning blends….it’s so much fun!). One thing I do differently is to add a little flour to my taco seasoning mix (this helps thicken the sauce, and it also gives it a smooth texture). For those who cannot use flour, corn starch will serve the same purpose. 🙂
After I have browned and drained my meat, I sprinkle the taco seasoning over the meat, stir to coat all of the meat well, and then keep stirring for a couple of minutes, until the taco seasoning begins to give off a nice aroma. Essentially, this process toasts the spices, which deepens the flavor. 🙂

You’re already adding cumin in the recipe, more would throw off the balance. There isn’t a good substitution for cayenne. Upon Googling Red Chili Powder is the closest.
