This marks my 100th post! I only just realized this and would have loved to do something extra special, but I recently had surgery and it’s just not possible. Ingredients
- 2 Chicken Breasts (sliced into four 1/4 chicken cutlets)
- 2 Tbsp. vegetable oil
- 1/4 cup vodka
- 1/2 cup chicken broth
- 2 Tbsp. fresh lemon juice
- 1/2 cup tomatoes,chopped
- 2 Tbsp. heavy cream
- 1/3 cup scallions, sliced

Thank you! The vodka deglazes the pan without leaving any flavor. I prefer it, rather than using a wine. You could try omitting the alcohol completely, but it wont deglaze the pan and get all of those wonderful flavors off.

I am an avid fan of easy to make dishes. Even if there are just a few steps, it doesn’t make it less of a dish. You can still put the same passion and love in simple dishes as much you will put in a complicated recipe. This really looks yummy! Happy 100 post! Looking forward to more delicious (and easy!!!) dishes! 😉

By far my favorite of all the new recipes I’ve tried in the last year. And I’ve tried ALOT of new recipes the last year. It was super simple but very tasty. I served it with angel hair pasta that had a touch of butter and a tablespoon or so of fresh basil from my herb garden.
